Frugal Easy Muffin Lovers' Morning Quick

Applesauce oatmeal muffin recipe is ideal for breakfast or a snack in-the-go. For more variety, you can also use the apple sauce with ripe bananas, plums, pears and peaches. Put the fruit in a blender and pulse until the desired size, then add the mixture. This recipe is ideal to use overripe fruit, you may have at hand.

Ingredients
1 cup flour
1 / 2 teaspoon cinnamon
1 / 4 teaspoon nutmeg
1 / 4 cupbrown sugar
1 / 4 cup oil
2 / 3 cup applesauce
3 teaspoons baking powder
1 / 2 teaspoon salt
3 / 4 cup oatmeal **
1 egg
1 / 3 cup milk

Instructions
Preheat oven to 375 degrees F, prepare muffin tins by spraying cooking spray on them or paper muffin door.

Prick Mix dry ingredients well with a fork. Beat egg, then oil and milk, stir in applesauce. Add the dry mixture to wet mix until just combined.

Spoon into pans and bake 20 minutes ormuffin top springs back after a light touch.

Healthy changes can be made with these recipes when dieting or weight is a concern. Replace 1 / 2 cup flour 1 / 2 cup of oatmeal. Use canola oil instead of vegetable oil and drop the content of milk fat by using nonfat or 1% instead of regular milk.

You can oat flour 3 / 4 cup of uncooked oatmeal for breakfast or take in a blender and blend until the oats are the consistency of flour. Oats canbe used in many recipes muffins or bread. Limit use, called by more than half of the flour for the recipe.

** Oats are not used instead of oatmeal, since it adds bulk and fiber to your muffins.
